Single-serving microwave apple oatmeal cooked in apple juice with fresh sliced apple, cinnamon, and nutmeg. Ready in 10 minutes with no added sugar needed.

The difference between plain oatmeal and this version is two things: apple juice as part of the cooking liquid, and fresh apple slices microwaved right into the bowl. The juice adds natural sweetness and a concentrated apple flavor that water can’t touch, which means no added sugar is necessary.

The technique is a two-step microwave. First, the apple juice, water, finely sliced apple, cinnamon, and nutmeg microwave together for 2.5 minutes in a measuring cup. Then the oatmeal goes into a separate bowl, the hot apple mixture pours over, and the whole thing microwaves again: one minute for quick oats, three for regular.

The recipe recommends Granny Smith or McIntosh. Both are good calls: Granny Smith holds its shape, McIntosh breaks down softer and melds into the oats. Both have the tartness to cut through the sweetness of the juice.

Ten minutes from cold to breakfast. One bowl.

Kitchen Tips

  • Slice the apple as finely as possible so it softens fully in the initial microwave step. Thick slices stay too crunchy.
  • The recipe notes that the unwrapped half of the apple keeps fine in the fridge for a day or two in plastic wrap, making this a practical two-morning recipe from a single apple.
  • Adjust the cinnamon and nutmeg to taste as the recipe suggests. Start light and add more once you see how the juice amplifies the spices.
  • Use unsweetened apple juice. Sweetened juice makes the oatmeal too sweet and adds unnecessary sugar.

Variations

  • Pear version: Swap the apple for half a ripe pear and use pear juice if you can find it, or stick with apple juice.
  • Raisins: Stir in a small handful of raisins with the apple before the first microwave step for extra sweetness and chew.

Directions

Place juice, water, apple and seasonings in microwave proof measuring cup. Microwave for 2½ min.

Place oatmeal in microwave proof serving bowl.

Add microwaved apple mixture to oatmeal.

Microwave 1 min for quick oats, 3 min for regular.

Notes: Seasonings can be adjusted according to taste. Half apples keep well until the next day or two by wrapping the unpealed half in plastic wrap.

Granny Smith or Macintosh apples are great for this.
