| 1 | cup | apple | chopped red |
| 1 | cup | cheddar cheese, reduced-fat | cubed |
| 1 | cup | walnuts | chopped, toasted |
| Honey dressing: | |||
| 2/3 | cup | honey | |
| 2 | tablespoons | cider vinegar | |
| 1 | teaspoon | celery seeds | |
| 1 | teaspoon | mustard, ground | |
| 1 | teaspoon | paprika | |
| 1 | teaspoon | lemon juice | |
| 1 | teaspoon | onion | grated |
| 1/4 | teaspoon | salt | |
| 1 | cup | vegetable oil | |
In a large salad bowl, combine the greens, apple, cheese and walnuts.
In a blender or food processor, combine the first eight dressing ingredients.
While processing, gradually add oil in a steady stream.
Serve with salad.

My family and friends have enjoyed this recipe on special occassions for many years. Finicky eaters, who say they don't like squash-think it's great!
