60 minThis old-school apple cake comes together in one bowl and bakes up dense, fruity, and fragrant with cinnamon. The batter is more fruit than flour, with two cups of peeled, sliced apples folded into a simple mix of sugar, egg, and just enough dry ingredients to hold it all together.
The real star here is the homemade caramel sauce. Brown sugar, white sugar, butter, and vanilla cook down into a glossy, buttery pour that soaks right into the warm cake. You pour it on hot, straight from the saucepan, so it seeps into every crack and crevice.
Chopped pecans add a toasty crunch that plays against the soft, almost custardy texture of the baked apples. A dollop of whipped cream on top keeps things honest.
Kitchen Tips
- Let the sliced apples sit with the sugar long enough for the juices to release. That liquid is part of your batter’s moisture, so don’t rush it.
- The cake is done when the edges pull away from the pan and a toothpick comes out clean. The center will look dense, and that’s exactly right.
- Make the sauce while the cake bakes so both are hot at the same time. The hot-on-hot pour is what gives you that soaked, sticky texture throughout.
Variations
- Swap pecans for walnuts, or leave the nuts out entirely for a nut-free version.
- Use a mix of tart apple varieties (Granny Smith, Braeburn) for sharper flavor contrast against the sweet caramel.
- Add a pinch of nutmeg or cardamom alongside the cinnamon for a warmer spice profile.
