Most apple coffee cake recipes add apples to batter. This one builds the batter around the apples. Two large peeled apples get tossed with brown sugar, chopped almonds, and golden raisins, and the eggs, melted butter, and vanilla go into that apple mixture rather than the other way around. The result is a cake that’s more apple than anything else.

The spice blend is what sets this apart from a standard apple cake. Cinnamon and allspice are familiar, but the half teaspoon of ground cardamom pulls the whole thing in a slightly more complex, almost Scandinavian direction. It’s warm without being heavy.

This is a one-bowl job. Stir the dry ingredients into the apple mixture just until moistened, as the directions say, and stop there. Overmixing develops gluten and turns a tender crumb into a tough one. The batter will look thick and chunky. That’s correct.

Pro Tips

  • Don’t over-mix once the flour goes in. Stir until you see no more dry pockets and put the spoon down.
  • Chop the apples into rough ½-inch pieces so they stay present in each slice rather than dissolving into the batter.
  • Cool slightly before cutting, at least 10-15 minutes, so the slices hold together.
  • The yellow raisins (golden raisins) are softer and sweeter than regular dark raisins. Either works, but golden is the better call here.

Variations

  • Pear swap: Replace the apples with two large Bosc pears for a softer, more floral result.
  • Walnut version: Use chopped walnuts instead of almonds for a more robust, earthy note.

Directions

Toss apples with sugar, almonds and raisins. Beat eggs with butter and vanilla and stir into apple mixture. Combine flour, baking soda cinnamon, allspice, cardamom and salt in a separate bowl. Stir dry ingredients into apple mixture only enough to moisten all ingredients.

Spoon into a greased 8” baking dish and bake in a preheated 350℉ (180℃) oven for about 45 minutes. Cool slightly before cutting.
