| 250 | grams | flour, self-rising | self raising |
| 100 | grams | butter | |
| 75 | grams | brown sugar, dark | |
| 150 | grams | mixed dried fruit | |
| 1 | tablespoon | treacle | black |
| 1 | each | egg | |
| 1 | teaspoon | ginger | ground |
| 1 | teaspoon | mixed spice | |
| 1/2 | teaspoon | salt | |
| 1/2 | teaspoon | baking soda | |
| 200 | ml | milk |
Cream the butter and sugar until light and fluffy. Beat in the egg and stir in the treacle. Sift the flour, ginger, spice and salt together and stir into the creamed mixture. Dissolve the bicarbonate of soda in the milk and stir into the cake mixture. Add the fruit and mix well.
Turn into a 20cm (8 inch) round cake tin lined with greased greaseproof paper and bake in a moderate oven (170C, 325F, gas mark 3) for 1 hour or until cooked.

Turned out very good. I was worried how they would turn out considering that there was absolutely no butter or oil in the recipe at all! They didn't rise as much as more traditional recipes but turned out great with a lovely rustic home-made appearance. Not too sweet, lots of chunks of apple and cranberries, bursts of sweet vs. sour. The texture was slightly like a sponge cake. I would recommend filling the muffin cup from 2/3 up to full.
