This apple bread doesn’t mess around with fancy techniques.

You beat together oil, sugar, and eggs, fold in flour and spices, then stir in chunks of fresh apple and whatever nuts you’ve got on hand.

The slow bake at 325°F keeps the loaves tender and gives those apples time to soften and release their juices into the crumb, creating pockets of sweet fruit throughout.

Kitchen Tips

  • Apple prep: Peel and chop apples into small, uniform pieces so they distribute evenly and bake through.
  • Two loaves strategy: Bake one, freeze one wrapped tight in foil. You’ll thank yourself later when unexpected guests show up.
  • Doneness test: A toothpick inserted in the center should come out clean or with just a few moist crumbs, not wet batter.

Directions

Grease 2 loaf pans.

In a large bowl beat together the sugar, oil and eggs.

In a separate bowl sift together the flour, salt, baking soda, and cinnamon.

Add the dry ingredients to the sugar mixture.

Add the vanilla, apples, and nuts.

Pour the batter into the prepared pans. Bake in a 325℉ (160℃) over for 1 hour.
