| 2 | pounds | ground beef | |
| 1 | cup | onion | chopped |
| 1 | tablespoon | garlic | chopped |
| 1/4 | cup | chili powder | |
| 1 | tablespoon | cumin | ground |
| 28 | ounces | tomatoes, canned | crushed, with added puree |
| 1 1/2 | cups | beef broth | |
| 2 | cups | corn kernels | fresh or frozen |
| 15 1/4 | ounces | kidney beans | drained |
| 1/4 | cup | cilantro | fresh, chopped |
Cook beef in heavy large pot over med. heat until brown, crumbling with fork, about 10 mins.
Add onion, garlic, chili powder, and cumin and cook 5 mins.
stirring frequently. Mix in crushed tomatoes, beef broth, corn, and kidney beans and bring to boil.
Reduce heat and simmer until thickened, about 30 mins.
Mix in cilantro.

I made this without the garlic and provolone, and it still turned out great. It delicious despite of my minor baking disaster. There was a glob of old, solidified, banana bread hidden on the bottom of my oven that started smoking like crazy while I was baking the focaccia! I had to stop baking half way through because the smoke was getting too thick...
