| 3 | pounds | beef chuck | lean, rough ground |
| 1 | pound | pork shoulder | lean |
| 3 | medium | onions | chopped |
| 1 | each | green bell pepper | chopped |
| 1 | each | sweet red bell pepper | chopped |
| 8 | each | jalapeno peppers | fresh, 2 seeded and chopped balance mashed |
| 2 | tablespoons | cumin | fresh, ground |
| 1 | teaspoon | allspice | |
| 1 | tablespoon | blackstrap molasses | |
| 12 | ounces | beer | (not lite) |
| 2 | ounces | sour mash whiskey | |
| 1 | ounces | red hot pepper sauce (eg. Tabasco) | vietnamese hot sauce or tabasco sauce |
| 5 | each | garlic cloves | crushed |
| 3 | tablespoons | masa harina | (fine yellow corn meal) |
| 1 | tablespoon | soy sauce | |
| 3 | each | bay leaves | |
| 2 | cups | tomatoes, canned | stewed chopped |
| 1 | cup | tomato sauce | |
| 1 | cup | tomato paste |
Saute onions, garlic, and chopped peppers in 4 tablespoons of peanut oil or bacon grease. Add the meat and cook until browned. Add the other ingredients except the cumin.
Stir constantly until it reaches a boil. Boil for 3-5 minutes then lower heat and cook, stirring often. After cooking for 10 minutes add 1 tablespoon of cumin and stir it in.
Cook for one hour over low heat then stir in the remaining cumin.
Cook for 15 minutes more and serve!
This recipe for my own AMBUSH CHILI, that has won in many cook-offs, and is retired from competition. The new recipe is called Ambush-2 Chili and has been entered now, in some 12 cook- offs and has placed each time including three 1st's!

This is a great recipe for those that like HOT foods. Try using honey in place of the sugar. It makes a smoother texture and a slightly different taste, a taste that we decided we liked better after trying it both ways. We serve it with pepperoni, crackers and a white cheese.
