Impossible Bisquick Coconut Pie

Impossibly easy coconut pie that forms its own crust while baking. Just blend, pour, and let the oven work magic for a custardy slice with toasted coconut on top.

This vintage gem proves that the best recipes are often the simplest.

Blend milk, sugar, Bisquick, eggs, butter, and vanilla for three minutes, pour into a pie plate, sprinkle with coconut, and slide it into the oven. While it bakes, the batter separates into three distinct layers: a golden crust settles on the bottom, a silky custard forms in the middle, and toasted coconut crowns the top. It’s like watching kitchen alchemy unfold, no rolling pin or pastry skills required.

Perfect for potlucks, last-minute dinner guests, or whenever you need a homestyle dessert without the fuss.

Kitchen Tips

  • Use room temperature ingredients for the smoothest blend and even baking
  • Let the batter rest for the full 5 minutes before adding coconut so layers form properly
  • Toast extra coconut separately if you want more crunch on top
  • Serve warm or chilled with whipped cream or a scoop of vanilla ice cream
