| 1 | cup | dates | chopped |
| 1/2 | cup | amaranth flour | |
| 1 | cup | water | boiling |
| 2 | large | eggs | |
| 1/2 | cup | honey | |
| 1/4 | cup | butter | melted |
| 2 | cups | whole wheat flour | |
| 2 | teaspoons | baking powder | |
| 1 | cup | pecans | chopped |
| 1 | teaspoon | vanilla extract |
Soak dates and amaranth in boiling water.
Beat eggs well, add honey and butter; beat well.
Stir in all remaining ingredients mixing well.
Pour into an oiled loaf pan.
Bake at 350 degrees F for 1 hour and 15 minutes.
