Ingredients

1cup amaranth flour
1 1/2cups brown rice flour or whole-wheat flour*
1tablespoon baking powderVideo non-alum
1teaspoon sea salt optional
1cup milkVideo soy milk or water
3tablespoons honeyVideo
2tablespoons vegetable oil
2large egg whites beaten, if using rice flour

Directions

Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients.

Pour batter into well-oiled 8" x 4" pan and bake at 350 degrees F about 45 minutes.

Cool 10 minutes before removing loaf to rack.
