Ingredients

2 cups figs dried
1 whole pineapple, fresh fresh
1 cup mandarin oranges
1 cup heavy whipping cream
2 tablespoons sugar
1/2 cups coconut toasted flaked
1 x mint sprigs (optional)

Directions

Slice dried figs. Slice pineapple into half; scoop out center; cut into bite-size chunks. Drain oranges.

Arrange figs, pineapple chunks and oranges in pineapple shells. Whip cream; stir in sugar and coconut (reserve some coconut for topping, if desired). Spoon over fruits.

Garnish with fresh mint, if desired.

Jello Pudding Fudge

I am not sure what I did wrong. The mixture began to get thick, like pudding, before it ever came to a boil. Therefore, I could not follow the directions and allow it to boil for one minute. The result was like hot fudge topping for ice cream. I would like to know what I did wrong. The flavor was outstanding. It did not go to waste. I ran out and got some ice cream. But I would like to have fudge with the same incredible taste. vphillips
