Ingredients

1 each onion chopped
1 teaspoon canola oil
1 teaspoon curry powder
10 ounces soup, tomato condensed, about 1 can
14 ounces chicken broth, low salt 1 can, or 1 3/4 cups water
2 tablespoons peanut butter natural
1 tablespoon cilantro freshly chopped
1 x salt to taste
1 x black pepper freshly ground to taste

Directions

Heat oil in a medium saucepan, sauté onion until softened, 3 to 5 minutes.

Stir in curry powder and cook, stirring, for 1 minute more.

Add condensed tomato soup and broth or water.

Bring to a simmer.

Whisk in peanut butter and cilantro.

Season with salt and pepper.

Serve hot.
