| 1 | each | onion | chopped |
| 1 | teaspoon | canola oil | |
| 1 | teaspoon | curry powder | |
| 10 | ounces | soup, tomato | condensed, about 1 can |
| 14 | ounces | chicken broth, low salt | 1 can, or 1 3/4 cups water |
| 2 | tablespoons | peanut butter | natural |
| 1 | tablespoon | cilantro | freshly chopped |
| 1 | x | salt | to taste |
| 1 | x | black pepper | freshly ground to taste |
Heat oil in a medium saucepan, sauté onion until softened, 3 to 5 minutes.
Stir in curry powder and cook, stirring, for 1 minute more.
Add condensed tomato soup and broth or water.
Bring to a simmer.
Whisk in peanut butter and cilantro.
Season with salt and pepper.
Serve hot.

My mother and I made these cookies when I was little, many years ago, using the box of dry mincemeat. I have looked for years for the recipe, they are the best cookies ever!!!
