| 3/4 | cups | sugar | |
| 2 | teaspoons | baking soda | |
| 1 1/2 | teaspoon | cinnamon | ground |
| 6 | each | egg | whites |
| 1/2 | cup | yogurt, plain | non-fat |
| 1/2 | cup | milk | skim |
| 1 1/2 | teaspoon | vanilla extract | |
| 2 | cups | apples | peeled, chopped |
| 2 | cups | carrots | grated |
| 1/2 | cup | coconut | flaked, optional |
| 1/2 | cup | raisins, seedless | |
| 1/2 | cup | almonds | sliced |
| 1 | x | sunflower seeds |
In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. Mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients.
Fill greased or paper lined muffing cups three-fourths full. Sprinkle with sunflower seeds. Bake at 375 degrees for 20-25 minutes or until muffins test done.
Carrots are fine in a recipe. The above person needs to go out more often and open her mind
