Ingredients

2 cups flour, all-purpose
3/4 cup sugar
2 teaspoons baking soda
1 1/2 teaspoons cinnamon ground
1/2 teaspoon salt
3 large eggs
1/2 cup vegetable oil
1/2 cup milk
1 1/2 teaspoons vanilla extract
2 cups apples peeled, chopped
2 cups carrots grated
1/2 cup coconut flakes, unsweetened
1/2 cup raisins, seedless
1/2 cup almonds sliced

Directions

In a large bowl, combine flour, sugar, baking soda, cinnamon and salt.

In another bowl, beat eggs; add oil, milk and vanilla.

Mix well; stir into dry ingredients just until moistened.

Fold in the remaining ingredients.

Fill greased of paper lined muffing cups three-fourths full.

Bake at 375 degrees for 20-25 minutes or until muffins test done.

Chocolate Peanut Dream Pie
