Hearty vegetable soup with 7-grain cereal, tomatoes, green beans, corn, mushrooms, and winter squash simmered until tender: finished with canola oil and fresh parsley for bright flavor.

90 minThis pantry-friendly soup throws everything into one pot: seven-grain cereal for nutty texture, canned tomatoes with their juice, green beans, corn, sliced mushrooms, and cubed winter squash.
Season with onion powder, garlic powder, and celery seeds, then let it all simmer for an hour until the grains are tender and the vegetables meld together.
Right before serving, stir in canola oil and a handful of chopped fresh parsley to wake up all those earthy flavors.
Serves six to eight hungry people or makes excellent leftovers.

Directions
Bring water to a boil, then add remaining ingredients (except for canola oil and parsley).
Bring back to boil and simmer, covered for 1 hour.
Add 1 tablespoon of AM Canola Oil before serving, and a handful of chopped parsley.
Any other vegetables of choice may be added or substituted.
