Ingredients

2 cups seven grain cereal cooked as per directions
2 cups water
2 tablespoons maple syrup
2 tablespoons vegetable oil
2 teaspoons sea salt optional
1 tablespoon baking powder
1/4 cup oats, quick cooking
2 cups cornmeal

Directions

Mix all ingredients (except for cornmeal) in blender until very smooth. Mix in cornmeal with a spoon. Fill oiled muffin cups 1/2 full. Bake at 375 degrees for 35-45 minutes.

Chicken Curry Casserole

This rice casserole was a big hit with my family! The only problem was that after 45 minutes the rice wasn't cooked at all. I baked it, covered, for another 30 minutes, and it was perfect. I think the next time I would cook it with covered. The taste was just excellent!
