peeled and sliced

thinly sliced

½ cup artichoke hearts
marinated, quartered

or to taste, from jarred artichoke hearts

118 ml artichoke hearts
marinated, quartered

or to taste, from jarred artichoke hearts

Directions

In a large bowl, add romaine lettuce, celery, carrots, red onion and artichoke hearts.

Drizzle the artichoke marinade liquid over the veggies.

Toss until well coated and mixed.

Divide onto serving plates and enjoy.

Note: You can add cucumbers, tomatoes, sweet bell peppers or radishes, whatever fresh veggies you have on hand.

The artichoke marinade from the jar is a great salad dressing that we use to toss salad all the time.
