A depression era soda bread reicip when many ingredients were in short supply.

Ingredients

1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon sugar
1 cup flour, all-purpose
1/2 cup sour milk or buttermilk, more or less

Directions

Combine the first 4 ingredients and then rub them through a sieve.

For making white soda bread use 1/2 of the soda mixture to 1 Cup of flour. Then mix as a soft drop dough with sour milk.

Pour into a well-greased pan and bake in a 450 degrees F oven for 12 minutes.

For Brown Soda Bread use 1 cup of whole wheat flour and 1/2 C white flour with 3/4 tsp. of the soda mixture and bake as above.

*When the original knob on your tea kettle lid comes off, use an empty spool cut in two, and fastened with a bolt and burr.

I think it will be good.But as I was gonig to make it the amount of buttermilk is left out.I need this to make the recipe.

Pate a la Rapure

I hope you don't mind...but this is the hard way of making this dish you have to be very careful and the results may be disastrous,especially for first timers.Here is an easier way.Grate potatoes,squeeze potatoes and reserve liquid and measure amount removed.You should have your meat cooked beforehand reserve the stock from the meat.In a large bowl ,put in potatoes and stir in stock a cup or two at a time until water is absorbed,add liquid and stir until most premeasured stock is used.This will give the desired consistency.Put about half the potato mixture on the bottom of your pan,spread meat on top and layer remaining mixture on top.Put in preheated 400 deg oven for 30 mins then 350 deg oven for about 2 1/2 hours.Remove from oven and enjoy.Here in Saint May's Bay we use salted green onions in the stock as we cook the meat.Carrots and celery are optional.
