1 bell pepper
Saute onion, pepper and garlic until soft. Add anything you like (these are my favorites) : 2 to 3 carrots, sliced
Cook until veggies are soft, drain. Add Mozzarella cheese to your liking. Fill tortillas. Bake 5 to 10 minutes at 350 degrees. Top with Guacamole: 2 to 3 avocados

GREAT FOR COMPANY!!! This was truely a lifesaver for a recent women's retreat I hosted at my house! With so many different prefrences...all was pleased!! ...and most wanted seconds!!
