Betty crocker's mincemeat bars (1961)

My first cookbook was the first edition of Betty Crocker's New Picture Cookbook. ( 1961) I gave it away - but really want the recipe for the mincemeat bars. I'm pretty sure it's in the Christmas cookie section. Does anyone have that cookbook, and is willing to post the recipe? My 41-year-old son asks me every year for those cookies!

Mincemeat Bars

Betty Crocker recipe

Cook Time: 12 Minutes Ready In: 35 Minutes
ields: 72 servings

These are spicy bar cookies made with mincemeat filling, spices and nuts.

They are topped with a sweet glaze while still warm.

INGREDIENTS:

1 tablespoon butter, softened

1 1/2 cups brown sugar

2 tablespoons molasses

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground cloves 3 tablespoons hot water

1/4 cup slivered almonds

1/4 cup raisins

1 (9 ounce) package

condensed mincemeat,

crumbled

1 1/2 cups confectioners' sugar

3 tablespoons hot milk

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

DIRECTIONS:

1. Preheat the oven to 400 degrees F (200 degrees C). Grease two 9x13 inch baking pans.

2. In a large bowl, mix together the butter, brown sugar, molasses and 1 teaspoon vanilla until well blended. Combine the flour, salt, baking soda, cinnamon and cloves; stir into the molasses mixture. Stir in hot water, almonds, raisins and mincemeat. Spread the dough evenly into the bottoms of both pans. It will be thin but the mixture will puff up when baking.

3. Bake for 12 to 15 minutes in the preheated oven, or until firm. Cool in pans on wire racks. In a small bowl, mix together the confectioners' sugar, hot milk, 1/2 teaspoon vanilla and 1/2 teaspoon almond extracts until smooth. Spread over warm bars. Allow to cool before cutting into squares.

Mincemeat Bar Cookies for Coolmonday Recipe

These bars are a great holday dessert, but could be enjoyed any time of the year.

40 min 10 min prep

1 (18 1/4 ounce) box yellow cake mix

1 cup oatmeal

1/4 cup butter, melted

1 (27 ounce) jar mincemeat

Preheat oven to 400.

Grease or spray 13 x 9 pan.

Combine cake mix, oatmeal and melted butter in mixing bowl.

Reserving 1 cup of mixture, spread remaining mix into prepared pan, gently pressing to form bottom "crust".

Spread prepared mincemeat over crust.

Sprinkle mincemeat with remaining cake mix mixture.

Bake for 30 minutes or until golden brown.

Allow to cool before cutting into bars.

These could be made in a tart pan with a removable bottom and cut into thin wedges.

Mincemeat Cookie Squares Recipe

This recipe is from Betty Crocker. I suppose I like it so much because,

while I really enjoy mincemeat, a slice of pie is just too much mincemeat for me.

With this great cookie, you can enjoy mincemeat but not be overwhelmed by it!

48 squares

1 hour 30 min prep

3 cups Bisquick

1 cup sugar

1 egg

3 tablespoons soft butter

1/4 cup milk

1 1/2 cups prepared mincemeat

Orange Glaze

1/2 cup powdered sugar, stirred together with

1 teaspoon finely shredded orange peel

1 tablespoon orange juice

Heat oven to 375?.

Grease an oblong pan, 13x9x2 inches. Thoroughly mix all ingredients except mincemeat and Orange Glaze.

Pat half of dough into pan to within 1/2 inch of each edge; spread with mincemeat. Pat out remaining dough to same size on waxed paper.

Place paper side up over mincemeat; peel off waxed paper.

Bake 30 minutes.

Cool slightly.

Drizzle Orange Glaze over top.

Cut into 1 1/2-inch squares.
