Made this salad for St. Patrick's Day party last night. Got rave reviews, it was light, refreshing yet very tasty. I roasted the corn in the pan with a bit olive oil and a clove of minced garlic; I didn't have green bell pepper, so I chopped up extra celeries; also I used red onion instead of scallions. After I made it, I let it sit in the frige for a few hours to marinate, and it was divine.
