About me

I started to teach myself as a kid to cook. I rarely can follow a recipe, so I work by sight, texture, and taste, trying ingredients that "sound good" to me. My favorite way to improve on a recipe is to think about saltiness, sweetness, tang, spice, and richness!!

I have raised my kids, two of whom had to be on special diets due to a disability, so I had to learn to be very creative. Now, I am teaching adults who live with disability. One of my classes is Healthful Cooking. In this class, I am showing them how to take their favorite foods and make them in a healthy version.

 

Cooking Interests

My forte in the kitchen would have to be soups and stews. My kids' favorites are my beet borscht, minestrone, corn chowder, smoked turkey and cannelini bean, chicken with sour cream dumplings, beef noodle, chana masala, egg flower and bok choy, paprika beef, cabbage with chicken apple sausage, mulligatawny and my chili con carne with smoked ham and chili corn bread baked on top.

I am mostly interested in down home cooking that doesn't take tons of money or time to make. I am also interested in learning more about baking...I am limited to cakes and breads without leavening and cookies. I could use an easy recipe for home made rolls.

BTW, I also adore Italian food and make my own pasta and raviolis, making sauce in the summer from local farm produce and freezing it for the winter!! (I am for buying locally, making things fresh, and eating in season.)
