  • Seafood Gumbo From the New Basic's Cookbook

    This recipe is a bit labor intensive but well worth it. I made and served it on Christmas Eve 05 and everyone enjoyed it. Also made a "special version" where I modified the ingredients by alternating plum and crushed tomatoes, substituting Italian for Cajun sausages and adding crushed red peppers. It was a smoker in more ways than one. Overall, I was pleased in that I did not have made a roux but rather relied on the okra to do double duty as the vegetable and the thickening agent. After cooking the dish, I threw in a few fresh spinach leaves as a garnish.

  • Paella a la Valenciana

    I made this recipie twice during the holidays: once on Christmas Eve sans the dry wine and again on the day after Christmas with the dry wine. On each occasion my family, guests, and I were awed by this recipie's rich and flavorful taste! This was truly a hearty meal. My variations included the use of turkey sauage instead of chorizo and salt pork. Also, as special treat, I included in the Paella a pound of large sea scallops and employed as a side dish, a can of Goya Black Beans with chooped onions and green peppers. I have tried various Paella recipies in the past;however, this one was by far the best. The directions are very clear. I was a bit dissapointed in the short grain rice but this could be attributed to the fact that I am simply a "long grain rice person", if you will. I will make this again soon and I highly recommend that you do the same!

Bisquick Dumplings

Thanks! love the recipe! I make it with a english dish from my Mom. Mince and Dumplings.. saute Ground beef,onions,garlic,Drain, add beef broth(need extra cause the dump. soak up a lot) add carrots (or any veg)cook till carrots aren't hard then thicken broth w/a little corn starch and water) make dumplings on top.Sprinkle w/ Parsley.. Brown the dumplings in oven. :)Sometimes I add a little red wine too and Mushrooms.
