I found this to be rather bland so I used a can of stewed tomatoes Italian blend. Even with this addition it still needs some more seasoning. I will add mushrooms next time. With a little practice this could be a winner!

This recipe turned out excellent. Only lasted 24hrs in my fridge. Friends have already put in a request to have one for the holidays.
The goat cheese mellows the pepperiness of the mixed greens, and the beets offer a sweet contrast to its bitter quality. Chopped walnuts add a little more texture to the salad. Tasty!
