Deluxe Chicken Supper

Have made this several times, just noticed the contrary review which seems opposite my own and and the other reviewers experience. Find it hard to fathom tossing it out since it's loaded with ingredients my whole family loves. To each their own, can only imagine some horribly wrong preparation technique; we will continue to make and enjoy this casserole every couple of months.

Mashed Potatoes and Apples with Bacon and Onions

Excellent. There was a slight tartness from the apples and it's hard not to like the caramelized onion and bacon toppings. Very nice way to dress up plain mashed potatoes.

Broccoli and Chicken Casserole

Loved the crunch of the broccoli. Nothing worse than cooked beyond death, mushy broccoli. Even with the 40 minutes in the oven the broccoli still retained a nice tender-crisp crunch. I sauteed the onions in a bit of oil along with a clove of garlic before adding.

Mexican Fruit Cake (Healthier Version)

Photo of Mexican Fruit Cake (Healthier Version)

If you are a regular user on recipeland, you probably already know that I always try to make everything healthier or as healthy as possible. Had been seen this Mexican Fruit Cake popping out for a while, and finally made it a few days ago. After making my changes from the original recipe, this one came out much healthier but still tasted delicious. Like I always say it all depends on how you prepare your food. Dessert can be not that bad for you, such as this one!
