Have made this several times, just noticed the contrary review which seems opposite my own and and the other reviewers experience. Find it hard to fathom tossing it out since it's loaded with ingredients my whole family loves. To each their own, can only imagine some horribly wrong preparation technique; we will continue to make and enjoy this casserole every couple of months.

Loved the crunch of the broccoli. Nothing worse than cooked beyond death, mushy broccoli. Even with the 40 minutes in the oven the broccoli still retained a nice tender-crisp crunch. I sauteed the onions in a bit of oil along with a clove of garlic before adding.

Yesterday Sean also made two versions of Egg Mcmuffins, one with bacon, and the other one without bacon. This is the vegetarian one that I had and really enjoyed. Beautifully cooked eggs were deliciously moist, roasted bell peppers added some yummy smokiness, and served it over homemade English Muffins (another recipe from Sean, see the link below). What more I can say, it's delicious!
