I know I have been giving lots of 5 star reviews to the recipes I made. I wasn't exaggerating, I do think a lot of them deserve even more than 5 star. My brillant husband Sean made this recipe two days ago, and it was great. The recipe was very easy, roasting developed lots of yummy flavors into tomatoes, garlic and shallots, which made the pasta super duper (not sure if there is such a word) tasty. For wilted greens I thought spinach and arugula were the best in this case, adding slightly bitterness and freshness. Goat cheese was a must at the end, mild and creamy, brought another layer of texture and flavor. Definitely worth making it again and again.
