Made this cold rice salad for the pot-luck we went to on last Saturday, and everyone couldn't stop going back to have more of this tasty and refreshing salad. It was so easy to make, and the ingredients were all very inexpensive. I also added some freshly chopped cucumber and radishes to the salad, I was glad that I did so, because both of the cucumber and radishes gave lots of refreshing taste and nice texture to the salad. The salad can be easily made a day ahead, the flavor wil be even better next day.
